Makloubeh, Our famous Palestinian dish

Happy weekend you guys! Even though I am sure our weekends are not the same anymore with what is going on in Gaza- Palestine. I have not been able to create content nor post anything here or on my social accounts. I am just glued to my phone! Till now More than 14 thousand have been killed, half of them children. More than 27 thousand injured. While the rest are being displaced with no place to go to! I cannot imagine what they are going through and how terrified they must be. It is just devastating and heartbreaking! With all this, the most ironic thing is them “Isr***” claiming our Palestinian dishes as their national dishes. In honor of our Palestinian dishes, I decided to write the recipe I know for Makloubeh! Bear in mind that it has so many different ways, but this is the way my mom makes it.

Ingredients:

1 large, diced onion

1 whole skinless chicken cut into pieces

3-4 Potato cut into circles

1 whole cauliflower cut into pieces

3-4 carrots cut into circles

2-3 tomato cut into circles

1 cup of vermicelli

3 cups of white rice

2 tbsp vegetable oil

Spices:

2 tbsp 7 spices

1 tsp ground cinnamon

1 tsp ground carnation

1 tsp ground cardamom

1 tbsp ground black pepper

1 tsp curry

1 tbsp Maggie

salt, as desired

Instructions: This is How I Make My Makloubeh

Step 1: Chop up the onion into slices.

Step 2: Heat the vegetable oil in a pot. Add the sliced onion. Let sear until lightly brown.

Step 3: Add the Chicken and stir for 4-5 minutes then add the spices. Mix well and then add the water until it covers the chicken. Let the chicken cook well.

Step 4: Slice the carrot, potato, cauliflower and tomato. Then fry or bake. (I usually prefer to bake/air fry using my Instant Pot Air fryer)

Step 5: Fry the vermicelli until lightly brown. Add to the already washed rice. Add the spices. Mix well.

Step 6: Here comes the layering part. In this part I prefer to use my Instant pot to save time! Add the sliced tomato and drizzle some rice (this step is usually made to prevent it from sticking) Add the chicken, Sliced, potato, cauliflower, and carrot. Final step of layering is adding the rice.

Step 7: Add water until it covers everything. Pressure cook for 12 minutes.

Ready to Flip and eat! Serve with yogurt and Mediterranean salad. Enjoy!
